  • Clean pork loin (no fat) | 1.5 kg
  • Passion Fruit Juice Concentrate | 500 ml
  • Water | 1 l
  • Passion Fruit | 1 unit(s)
  • Crystal sugar | 2 tablespoon
  • Garlic and Onion |  to taste
  • Olive oil |  to taste
  • Salt |  to taste


  1. Just before starting to prepare, clean the loin piece so that it does not have any fat and make some holes in the meat. Then leave the meat for 10 minutes in the water. When removed, season with salt and let it rest.
  2. While the meat is absorbing the salt, start preparing the sauce by mixing the passion fruit juice, 1 l of water, 2 tablespoons of crystal sugar and, if you wish, add the passion fruit juice to this mixture and leave the seeds (if you want to put it later in the sauce). Reserve.
  3. After letting the meat absorb the salt, pour the water that forms into the bowl and take the meat to a frying pan (I used the iron one). Put the seasoning - garlic and salt and sauté with a little oil, when they are golden, add the meat and let it take a little of the flavor of time. Soon after, start adding, little by little, the passion fruit juice mixture and let the broth cook the meat. Turn the piece so that all sides get the flavor and gradually add more of the mixture.
  4. I let the meat sear a little on the fire, to form a crust and then, I added some more sauce and put it in the oven to finish roasting. About 35 minutes remove and see if it is already cooked, with a thermometer the jerky is around 65º.
  5. Separately it is possible to thicken a little of the broth, to add to the meat. And, if you want, add some of the seeds to this mixture. Remove the meat from the oven and place a little more of the sauce, with the seeds, on top of the meat. Serve with rice and farofa.
