- Cut the ham into large cubes. Season with salt, lemon, pepper and garlic. Let it rest while the chopped onion is golden in the pan. When the onion is very golden, add the meat and let it sauté over low heat.
- Stir only when the meat is well browned underneath; it will create water when it is sautéed. When it's drying, add a little water little by little, to brown the meat. Finally, add parsley and chopped chives to taste.
