- Take the pancetta and make zigzag cuts in the leather, smearing it with oil and seasoning with salt and pepper.
- Preheat the airfryer for 5 minutes at 200°C.
- Place the pancetta in the airfryer, leather side up, for 1 hour.
- Remove, cut and serve with lemon
