Separate a pressure cooker, and start washing the mocotó, cut the pepperoni into slices and set aside.
Then cut the jerked beef into large cubes, wash well to remove the salt and add it with the mocotó and the pepperoni.
In the pressure cooker, add the crushed onion and garlic and 3 tablespoons of oil. Bring to a boil and sauté, then add the chopped tomato, pepper, chili pepper, coriander, chives and parsley and sauté a little longer.
Take the meat that is reserved, add the vegetables that have been sautéed, and add the 3 cups of water if you find it too little, add a little more.
Add the cumin, black pepper, and the coloring (coloral)
Cover the pan and let it cook for 25 minutes to get everything soft while it cooks, cut the vegetables and set aside.
After 25 minutes, turn off the heat and add the vegetables and cook for another 5 minutes.
