- Cleaned and diced fillet400 g
- Demi glace (well reduced beef broth)200 g
- Chopped Onion40 g
- Olive oil20 ml
- Free-range egg4 unit(s)
- Ripe plantain280 g
- Cará150 g
- Yam150 g
- White Sweet Potato150 g
- Sunflower seed50 g
- Pumpkin seed50 g
- Black sesame50 g
- In a frying pan, put the oil and brown the onion. Add the chopped fillet and sauté for 1 minute over high heat. Throw in the demi glace, adjust the salt and set aside.
- Cook eggs in boiling water for 4 minutes. Remove from water, cool quickly and peel. Reserve.
- Grind the seeds in a blender, season with salt and set aside.
- Cut the banana lengthwise and grill in a non-stick skillet. Reserve
- Cook the roots in boiling water, pass through a fine sieve, adjust the salt and set aside.
- Mounting : Heat the mincemeat, pass the egg in boiling water just to heat up, heat the puree and serve the dish.
