Loin with Pineapple

- Pork Loin1.5 kg
- Lemon2 unit(s)
- White wine1 cup
- Salt to taste
- Pepper to taste
- Rosemary to taste
- Sliced pineapple1 unit(s)
- Sugar1 cup
- Onion in petals1 unit(s)
- Put the loin in a shape and make holes in it with a knife. Season with salt, pepper, rosemary, lemon juice and wine. Let the seasoning set for at least 2 hours in the fridge. Always watering the marinade broth.
- Bake in a preheated oven at 200°, covered with aluminum foil, for about 1 hour.
- Remove the foil and leave in the oven for another 1 hour, basting constantly, until golden.
- In a pan, put the sugar and let it melt until it starts to caramelize, add the pineapple and onion and let it cook until golden. Serve with the tenderloin.
