- Piece of seasoned pork loin700 g
- 1 garlic clove to taste
- Celery to taste
- Bay leaf 2 to 3 leaves to taste
- Wheat Flour100 g
- Whole wheat flour400 g
- 1 can of Beer to taste
- Warm water250 ml
- Biological Yeast25 g
- Salt to taste
- Cook the meat in beer, along with garlic, celery and bay leaf in a pressure cooker for approx 20 min after pressure is reached
- Melt yeast in warm water and let stand for 10 min.
- Mix the two flours and the salt, then mix the water with the yeast
- Knead for approx. 20 min until you have a bread dough.
- Let the dough rest for approx 10 min.
- After resting, roll out the dough until it is 2 to 3 cm thick.
- Remove the loin from the broth, place it in the center of the dough and wrap it up like a big loaf.
- The broth can be used to make a sauce, it's very good, if you don't want to discard it
- Bake in preheated oven at 180 degrees for approx 1:30.
- Remove from the oven and serve while still warm.
