  • Pork shank1 kg
  • Oil or fat300 ml
  • Salt1 teaspoon
  • Oregano to taste
  • Garlic4 unit(s)
  • Black pepper to taste
  • Lemon1 unit(s)
  • Seasonings for meat to taste
  1. Chop the ham into medium cubes (pieces of 3 fingers in size on average)
  2. Season with the seasonings of your choice, I used salt, pepper, oregano, lemon, garlic and coloral.
  3. Leave to marinate for half an hour.
  4. Add the oil and seasoned meat to a pan.
  5. Fry over medium heat until golden, stirring constantly to avoid burning at the bottom of the pan.
  6. Drain the fat when ready.
  7. Tip: serve with white rice, accompanied by vinaigrette and farofa
