Fillet steak with mushroom sauce

  • Olive oil2 tablespoon
  • Filet Mignon4 unit(s)
  • Small yellow onion, diced1 unit(s)
  • Clean brown mushroom1 pound
  • Minced medium garlic clove3 unit(s)
  • Low sodium beef broth1 cup
  • Chopped fresh thyme1 tablespoon
  • Balsamic Vinegar1 tablespoon
  • Almond milk1/2 cup
  • Cornstarch or flour1 tablespoon
  • Salt and pepper0 to taste
  1. Pat the steaks dry with a paper towel and rub with salt and pepper on both sides.
  2. Heat the oil in a large skillet over medium-high heat.
  3. Add the steaks with plenty of space between them or cook in batches.
  4. Let the fillets cook undisturbed for 2-4 minutes on each side.
  5. When the steak is done, set it aside on a plate and cover to keep warm.
  6. In the same preheated skillet, add remaining oil.
  7. Saute onions for 2-3 minutes.
  8. Add the mushrooms and garlic and continue to cook stirring constantly for 3-4 minutes.
  9. Add the broth and thyme; let it bubble until the liquid is reduced by half, 5-7 minutes.
  10. In a small bowl, mix the almond milk and cornstarch well.
  11. Add the cornstarch mixture to the pan and whisk until the sauce has thickened, 2-3 minutes.
  12. Mix in the balsamic vinegar.
  13. Return the meat to the pan and drizzle with the sauce, keeping it on the heat for 1-2 minutes, more or until heated through.
  14. Garnish with fresh thyme
  15. Now just serve!😉
