- Black beans1/2 kg
- Bay leaf3 unit(s)
- Paio sausage200 g
- Bacon150 g
- Chopped Onion1 unit(s)
- Garlic (tooth)3 unit(s)
- Olive oil2 tablespoon
- Dried meat150 g
- Spices to taste
- Soak black beans overnight
- Cut the dried meat into cubes and place in a bowl covered with water to desalt, ideal to change the water every 3 hours and do this process overnight
- The next day put the dried meat and beans in the pressure cooker. Take to cook for about 50 minutes.
- In a frying pan put the olive oil, along with the chopped garlic and onion. Turn on the heat and then together with the sausage and bacon cut into cubes to sauté. Reserve
- With the beans already cooked, add the bacon and linguixa in a single pan together with the cooked beans and dried meat. Cover with water, season to taste and let it cook for about 15 to 20 minutes.
- Then it's just a matter of enjoying yourself. For side dishes I suggest braised kale, crackling, white rice, farofa, vinaigrette
