  • Beef tripe | 500 g
  • White beans | 500 g
  • Peppers (yellow, red or green) | 1 to taste
  • Black pepper | 1 to taste
  • Salt | 1 to taste
  • Rosemary | 1 unit(s)
  • Thyme | 1 unit(s)


  1. Cut the tripe into strips, clean and remove excess fat. Place in boiling water, lemon, sprigs of rosemary and thyme.
  2. Repeat step 1, 3 times.
  3. Cook the white beans al dente and reserve the water.
  4. In a pressure cooker, place the tripe and seasonings and water from the white beans.
  5. In a crock pot, boil the ingredients and calibrate the seasoning until it's to your liking.
