- Ossobuco (beef cinnamon) in pieces2 kg
- Salt to taste
- Chopped Onion150 g
- Minced garlic20 g
- Colorau1 tablespoon
- Chopped peppermint leaves to taste
- Chopped basil leaves to taste
- Chopped Parsley to taste
- Sliced chives to taste
- Cassava flour from a small producer12 tablespoon
- In a large, heavy pot, place the pork fat to heat.
- Season the pieces of meat with salt and brown, little by little, in the pork fat. Remove and reserve.
- In the same pan, sauté the onion and then the garlic and paprika.
- Return the pieces of meat to the pan. Cover them with water and cover the pan. Cook for approximately 2 hours or until the meat is very tender. During cooking, if necessary, add hot water.
- Add the peppermint and basil leaves, parsley and chives. Boil with the pan uncovered for 20 minutes. Finally, correct the salt.
- When serving, place 2 tablespoons of manioc flour in the bottom of the plate. On top, pour a ladle of broth and mix well until it becomes a mush. Add the pieces of meat and enjoy the recipe.
