  • Pork fat6 tablespoon
  • Ossobuco (beef cinnamon) in pieces2 kg
  • Salt to taste
  • Chopped Onion150 g
  • Minced garlic20 g
  • Colorau1 tablespoon
  • Chopped peppermint leaves to taste
  • Chopped basil leaves to taste
  • Chopped Parsley to taste
  • Sliced chives to taste
  • Cassava flour from a small producer12 tablespoon
  1. In a large, heavy pot, place the pork fat to heat.
  2. Season the pieces of meat with salt and brown, little by little, in the pork fat. Remove and reserve.
  3. In the same pan, sauté the onion and then the garlic and paprika.
  4. Return the pieces of meat to the pan. Cover them with water and cover the pan. Cook for approximately 2 hours or until the meat is very tender. During cooking, if necessary, add hot water.
  5. Add the peppermint and basil leaves, parsley and chives. Boil with the pan uncovered for 20 minutes. Finally, correct the salt.
  6. When serving, place 2 tablespoons of manioc flour in the bottom of the plate. On top, pour a ladle of broth and mix well until it becomes a mush. Add the pieces of meat and enjoy the recipe.
