- Clean tripe300 g
- Olive oil to taste
- Minced garlic30 g
- White onion100 g
- Smoked pork sausage40 g
- Bay leaf to taste
- Thyme to taste
- Black pepper to taste
- Salt to taste
- Tomato Extract50 g
- Tomato concassé70 g
- Chili pepper5 g
- Beef broth50 g
- Green Scent to taste
- Clean the tripe and cook in water until soft. Drain.
- Quickly sauté the garlic, onion, sausage and tripe in olive oil and then add the rest of the ingredients, except the parsley.
- Finish with the green smell and serve with Italian bread.
