- Clean tripe500 g
- Vinegar3 tablespoon
- Pre-cooked white beans250 g
- Diced Bacon250 g
- Sliced Calabrian Sausage1 unit(s)
- Sliced paio sausage2 unit(s)
- Small sliced carrot1 unit(s)
- Paprika1 dessert spoon
- Squeezed garlic cloves5 unit(s)
- Small chopped onion1 unit(s)
- Chopped Tomato1 unit(s)
- Green pepper1/2 unit(s)
- Green olive50 g
- Tomato sauce2 tablespoon
- Bahian seasoning to taste
- Bay leaf2 unit(s)
- Salt to taste
- Chopped green parsley1 tablespoon
- Boil the cleaned tripe for 10 minutes in a pan with 1.5 liters of water and the vinegar. Run and book
- Then, put 1.5 liters of water in a pressure cooker and add the salt, the bay leaf, the tripe, cover the pan, bring to the boil and cook for about 30 minutes.
- In another pan, add the bacon, pepperoni sausage and paio sausage. Let it brown.
- When golden, add the garlic, onion, paprika, tomato, green pepper, carrot, tomato sauce, green olive, pre-cooked beans and cooked tripe.
- Add salt and Bahian seasoning to taste. Then add 1 liter of hot water and cook for about 15 minutes.
- Finish with minced green smell and serve next.
