  • White beans500 g
  • Dry meat300 g
  • Pepperoni sausage2 unit(s)
  • Double / tripe1 kg
  • Carrot2 unit(s)
  • Potato2 unit(s)
  • Seasonings to taste
  • Tomato sauce to taste
  1. Leave the beans to soak for about 6 hours, clean and cut the tripe (boil about 3 times with lemon and bay leaf) so the strong smell comes out.
  2. Desalt the dried meat and cut it to the size you prefer and bring to a boil.
  3. Put the beans to cook with the meats for about 35 minutes so as not to soften the meats too much, when you take them out, season them normally with garlic, salt and onion.
  4. After seasoning I add the already cooked potato and carrot, add a little tomato sauce and finish with green smell. (if you like you can add some olives too.
