  • Lentils: Green lentils170 g
  • Water600 ml
  • Bay leaf1 unit(s)
  • icing200 g
  • Brunoise red onion30 g
  • Minced garlic10 g
  • Butter30 g
  • Codeguim (assembly): lentil800 g
  • Codeguim600 g
  • Tomato concassé60 g
  • Chives8 g
  1. Codeguim: cook the pork skin for 1 hour.
  2. After that, drain and reserve.
  3. Grind the meat and fat in the machine no. 12.
  4. Grind the cooked skin twice.
  5. Mix the meat, fat and skin and season with salt, white pepper and ground nutmeg.

  14. Add the cooked lentil.
  15. Add the frosting and let reduce for 8 minutes.
  16. Emulsify with butter and store in the fridge.
  17. Codeguim: In a skillet, heat the lentils.
  18. In a pan, heat the codegin in hot water for up to 4 minutes.
  19. Add the codegum to the skillet and finish with the tomato concassé, parsley and chives.
