- Arborio rice1 cup
- Chopped pepperoni150 g
- Homemade chicken broth1 l
- Chopped Onion1/4 cup
- Dry white wine1/2 cup
- Fresh peas1/2 cup
- Butter1 tablespoon
- Chopped green seasoning1 tablespoon
- Ground black pepper to taste
- Sea salt to taste
- Grated Parmesan Cheese1/3 cup
- In a pan, fry the pepperoni and reserve, leave the fat that has released in the pan, add the butter and brown the onion well.
- Add the arborio rice and stir well to seal the grains, add the wine and mix, when the liquid begins to dry, add a ladle of hot chicken broth, pepper and a little salt and stir.
- Continue the process of adding the stock and stirring until the rice reaches your preferred cooking point (the more you stir, the creamier your risotto will be), add the fresh peas, mix, adjust the salt and turn off the heat.
- Finish with Parmesan cheese and green seasoning. Serve immediately.
