- Clean the pork belly. In a pressure cooker, brown the belly. Add the sake, soy sauce, chopped ginger and chive stalks. Cover with water and let it cook for 15 minutes after getting pressure.
- Take the pressure off. Dissolve the sugar in the broth, remove the pieces of ginger and chives and leave on low heat for the broth to settle and the meat to take on flavor.
- In a bowl, place a portion of Japanese rice, and the pieces of the belly, drizzle with a little of the broth. If you want, place an egg with the soft yolk and chives or sesame or nori to decorate.
