- Wash well with vinegar and put the tongue in the pressure cooker for 30 minutes with half an onion, coarsely crushed garlic, seasonings to taste and water until covered.
- Remove the skin and cut slices. Season to taste and light to roast on the hot or sauté in the skillet.
- Great to serve with vinaigrette.
