  • Salt to taste
  1. Wash well with vinegar and put the tongue in the pressure cooker for 30 minutes with half an onion, coarsely crushed garlic, seasonings to taste and water until covered.
  2. Remove the skin and cut slices. Season to taste and light to roast on the hot or sauté in the skillet.
  3. Great to serve with vinaigrette.
