  • Nutmeg to taste
  • Salt to taste
  • Beef Glace: Beef Glace200 g
  • Marsala wine10 g
  1. Tongue preparation: make a brine (hot water with salt) and marinate the tongue in this base for 2 hours.
  2. Cook in the pressure cooker for 20 minutes with 1 L of water.
  3. Remove the tongue and cut and cubes.
  4. Preparation of the half-cured cheese sauce: in a pan, cook the potatoes with water and milk for 30 minutes. Drain the potatoes and place in a fine sieve.
  5. Pass a spoon so that the potatoes pass through the sieve.
  6. Return this base to the pan, add the cream and butter. Salt and nutmeg to taste.
  7. Stir with a whisk until the mixture is smooth.
  8. Glace: mix it all up.
  9. Finishing: use 100g of the meat glace to lacquer the tongues and place them in the oven at 160 degrees for 5 minutes.
