- Risoni Pasta1 cup
- Shredded Beef1.5 cup
- Chopped Onion1/4 cup
- Chopped Garlic1 dessert spoon
- Olive oil1 dessert spoon
- Grated colonial cheese1/3 cup
- Chopped dried tomatoes1/3 cup
- Sliced cherry tomatoes6 unit(s)
- Fresh Basil Leaves to taste
- Sea Salt to taste
- Ground black pepper to taste
- Red wine1/3 cup
- Homemade vegetable stock3 cup
- In a high skillet heat the oil and brown the onion and garlic.
- Add the dried tomatoes and mix.
- Add the wine and stir until it evaporates.
- Add the risoni and 2 cups of the hot vegetable stock.
- Keep stirring and add the meat, salt and pepper. Add more vegetable broth if needed to finish cooking.
- When the pasta is cooked, stir in the cheese and turn off the heat.
- Top with tomatoes and basil leaves and drizzle with olive oil. Serve immediately.
