- Oil for frying to taste

- Dijon mustard to taste
- Homemade Mayonnaise (recipe here)200 g
- Cut the loin into 4 parts, hit with a hammer between two pieces of plastic until a thickness of 2 cm, season with salt and pepper; Dip in wheat, then egg, then in breadcrumbs. Put in the fridge before frying
- Cooking the potato with skin and all, Peel while still hot, cut into rustic pieces, season with salt and pepper and olive oil, mix the mayonnaise, herbs, onion and freeze;
