- 3 zucchinis, 600 grams of lean meat, 2 eggs, 1 ex tomato, fresh herbs, colored peppers to taste, 1 medium onion.firm cheese, canasta, pasteurized... to taste
- Black pepper, salt, herbs to taste
- Wash the pumpkins very well, then cut the part that looks like a pasta in a vegetable slicer, set aside. Grind the meat twice, add 1 finely grated onion, half a tablespoon of salt, a pinch of black pepper, finely chopped fresh basil and thyme, the 2 eggs and mix everything very well, until it becomes a firm dough. with 50 grams each and place a cube of cheese in the middle and roll up well.
- In a good frying pan, heat a thread of oil and add the meatballs gently, let them brown on both sides, add the tomatoes cut in half, a thread of olive oil and cover for about 5 minutes. Add the chopped peppers to taste, herbs.. then just assemble the plate and enjoy...
