  • Zucchini1/2 unit(s)
  • Carrot1 unit(s)
  • Kale Butter2 unit(s)
  • Spinach1 cup
  • Salt to taste
  • Oregano1/2 teaspoon
  • Olive oil1 teaspoon
  • Egg5 unit(s)
  1. Cut the onion in half moon;
  2. Grate the zucchini and carrots;
  3. Cut the kale and spinach leaves into thick strips;
  4. Sauté the onion in the oil until it starts to caramelize;
  5. Add the grated vegetables, salt and oregano and sauté for 3 minutes;
  6. Add the green leaves and mix;
  7. Add the beaten eggs and cover the skillet;
  8. Cook on both sides over low heat. And it's done!
