- Fresh cream400 ml
- Whole milk400 ml
- Gems4 unit(s)
- Xylitol60 g
- Vanilla Extract1 tablespoon
- Heat the milk and cream until it comes to a boil.
- In a separate bowl, beat the yolks and xylitol until you get a light yellow cream.
- Season the yolks with the warmed milk and then take it all back to the pan over low heat.
- Stir constantly until you get a cream in nape point.
- Place the cream in the freezer for 12 hours.
- Transfer the cream to the mixing bowl and beat with the racket until creamy. Return the ice cream to the freezer and repeat the process 2 more times.
- Keep in the freezer until serving time.
