  • Chocolate 70%170 g
  • Almond flour160 g
  • Butter155 g
  • Egg white4 unit(s)
  • Hydrated dates100 g
  • Egg Yolk64 g
  • Filtered water3 tablespoon
  • Vanilla Extract1 tablespoon
  1. Pre-heat the oven at 180 °.
  2. In a mixing bowl, add the butter and beat until creamy. Then add the yolks and beat more to homogenize. Reserve.
  3. Process the hydrated dates with the 3 tablespoons of the mentioned water and the vanilla extract. Beat until it forms a very smooth cream.
  4. Add the dates to the mixing bowl and beat to incorporate the date cream. Reserve.
  5. Chop the chocolate and melt in a bain-marie.
  6. Add the chocolate to the butter cream and dates until smooth. Reserve.
  7. Add the flour little by little over the finished dough until well homogenized.
  8. Beat the egg whites and add 1/3 of the whites to the dough and mix well. Add the rest of the snow whites making light movements so that the dough is aerated.
  9. Add the dough in a greased shape and bake for approximately 25 minutes.
