- In a bowl beat the yolks, xylitol, wheat flour and starch, in a pan heat the milk and cream. Season the yolks with the warmed milk mixture. Return everything to low heat, stirring constantly. When it thickens, count for 3 minutes and turn off the heat, keep stirring for another minute, add the vanilla extract, cover with plastic film and take it to the fridge for 3 hours.
- In a separate bowl, mix the butter and xylitol, add the flours and a pinch of salt and work the dough until smooth. Roll out the dough between two sheets of parchment paper, apply it on a mold and bake at 180°C in a preheated oven.
- Spread the cold stuffing over the dough, arrange the strawberries on top and serve.
