FOR THE SAUCE
Blend the tomato with skin and seeds in a blender. In a pan, heat the oil and sauté the onion and garlic. Add the tomato and tomato paste. Season with salt and pepper to taste.
Make a side cut in the sausage, remove the meat, put it in a refractory and mix well to get a homogeneous mass. Reserve. Let it grill for 5 minutes on medium heat with campa to fully cook the sausage (if you prefer, turn to grill the other side)
Pass the tomato sauce, put the mozzarella, the thinly sliced onion, the tomato slices, olives, tomato slices, parmesan, oregano. Cover skillet for 3 minutes or until cheese is melted. Finish with basil.
