- Olive oil1/2 to taste
- Salt1 tablespoon
- Cut the carrots, leaving only about 1 to 2 cm. Wash them very well under running cold water. Drain with a cloth.
- Transfer the carrots to a tray. Add the olive oil and the crushed garlic, but with the skin. Season with coarse salt and pepper. Cover with a sheet of parchment paper. Turn on the oven at 200º C and place the tray in it.
- After 30 minutes, remove the parchment paper, stir the carrots and return to the oven, without the parchment, for another 15 minutes. Sprinkle with fresh rosemary and serve.
