- Mozzarella100 g
- Basil1 to taste
- Oregano1 to taste
- Parsley1 to taste
- Olive oil1 to taste
- Salt1 to taste
- Cut the eggplants into 2cm slices. Place in a bowl with water and salt and leave for about 10 minutes. Drain and dry well with a paper towel. Place the slices on a baking sheet lined with parchment paper and season with salt, pepper and olive oil. Bake in the oven for about 20 minutes or until cooked through. Remove from oven. Make a sauce with the tomato, onion, garlic, parsley, salt, black pepper, basil. Spread over the eggplant slices. And on top of the slice of mozzarella. Sprinkle oregano. Bake for another 15 minutes or until the mozzarella is melted. Ready, now just taste!
