- Extra Virgin Olive Oil to taste
- Salt to taste
- Black pepper to taste
- Grated Parmesan Cheese4 tablespoon
- Eggs3 unit(s)
- Light cottage cheese3 tablespoon
- Mozzarella cheese50 g
- Cut the zucchinis into cubes;
- Cut the onion into cubes;
- Take the onion to a pan already greased with oil and sauté the onion until golden;
- Add the zucchinis to the pan and add salt, pepper and stir;
- Add a tablespoon of grated Parmesan cheese, mix and add another tablespoon of grated Parmesan cheese;
- Separate 3 yolks and add them to the mixture. Add 3 tablespoons of light curd and mix everything;
- Beat the egg whites with a whisk and add to the pan, stir everything;
- Grease a platter with olive oil, add the mixture, pieces of mozzarella cheese and 2 tablespoons of grated Parmesan cheese;
- Bake in a preheated oven at 180°C for 30 minutes.
