  • Sour cream200 g
  • Gems3 unit(s)
  • egg whites3 unit(s)
  • Xylitol100 g
  • Fleur de sel to taste
  1. In a bowl, melt the chocolate and cream together, then add the yolks and set aside.
  2. In the mixer or in a very dry bowl, add the whites and beat them until they reach medium peaks, then gradually add the xylitol and continue beating until you get a shiny and shimmering meringue.
  3. In three parts add the meringue to the chocolate ganache so that it does not lose the inclusion of air. Place in the fridge for 4 hours before serving. Finish with fleur de sel.
