- Lamb3 kg
- Vinegar1 cup
- Lemon4 unit(s)
- White wine500 ml
- Salt and pepper to taste
- Garlic4 unit(s)
- White onion1 unit(s)
- Marinate the meat for 24 hours. Mix the vinegar, wine, chopped garlic and onion, lemon juice and salt and pepper.
- Turn the meat or baste it 2 or 3 times with the marinade.
- Bake over low heat for about 2 hours in aluminum. I used a large traditional pan.
- After 2 hours, apply the chimichurri, I used 4 tablespoons. Bake for another 1 hour or until it reaches the crust point.
