- 70% cocoa chocolate100 g
- Egg Yolks4 unit(s)
- Demerara sugar or sweetener1 tablespoon
- Unflavored and colorless gelatin1 teaspoon
- Balnilha essence (optional) to taste
- Melt the chocolate in a bain-marie or microwave.
- In a bowl, place the egg whites, sugar and gelatin. Take it to the water bath without letting the container come into contact with the water and mix until all the solid part is well dissolved in the whites.
- Beat the egg whites until you get a very firm meringue. Add a few drops of balnilha essence and gently mix with the melted chocolate. You can't beat it so as not to remove all the air present in the snow whites.
- Sprinkle some cocoa powder on top and refrigerate for approximately 2 hours. Serve as you see fit.
