- Demerara sugar1/2 cup
- Coconut oil or olive oil120 ml
- Rice flour1 cup
- Baking powder1 teaspoon
- Cinnamon -optional to taste
- Lactose-free chocolate - optional to taste
- Pinch of salt1 unit(s)
- In a bowl mix the sugar, egg and oil.
- Add the rice flour, baking powder and a pinch of salt. Stir until smooth (if you have chosen to use coconut oil, the mixture will be more difficult to stir).
- Mix cinnamon and chocolate.
- If possible, leave it in the fridge for 30 minutes until firm, so you can shape the cookie in your hand, just like brigadeiro. If you don't want to put it in the fridge, use a spoon to help shape the dough.
- Place the cookie portion of the desired size on a greased baking sheet or lined with parchment paper and bake in a medium oven for approximately 10 minutes or until you notice that they are getting golden underneath.
- Wait for it to cool down to unmold otherwise they might break.
