- Diced chicken breast500 g
- White rice1 cup
- Diced Sweet Potato300 g
- Coconut milk400 ml
- Broccoli400 g
- Sweet tomato250 g
- Watercress150 g
- Carrot100 g
- Chayote400 g

- Garlic and Onion to taste
- Salt, pepper, paprika and green smell to taste
- I seasoned the chicken cubes with salt, paprika, pepper and lemon and let it marinate for 20 minutes. In a pan I put 2 tablespoons of olive oil, I fried the chicken until golden brown, I added chopped garlic and onion, sweet potatoes and water, covered the pan and cooked for 20 minutes. When it started to dry all the water, I added the coconut milk and the tomatoes, mixed well, turned off the heat and finished with green smell.
- I cooked the beans for 8 minutes under pressure with water, salt and saffron. I sautéed garlic and onion in olive oil and added the chayote, a cup of water and cooked for 10 minutes, added the cooked beans, watercress and pepper and left in the heat until the broth was clear.
- For the rice, I sautéed garlic in olive oil, added the rice, grated carrots and broccoli, seasoned with salt and pepper, added water and cooked for 15 minutes.
- I served it with a fresh watercress, tomatoes and linseed salad, seasoned with olive oil, salt and lemon.
