Chicken Sassami with Functional Sauce

  • Chicken Sassami1 kg
  • Chopped Garlic1 tablespoon
  • Squeezed Lime1 unit(s)
  • Sea Salt to taste
  • Fresh Rosemary Sprig1 unit(s)
  • Ripe tomato1 kg
  • Large unpeeled onion1 unit(s)
  • Unpeeled medium carrot1 unit(s)
  • Unpeeled medium beetroot1 unit(s)
  • Peeled garlic clove4 unit(s)
  • Olive oil2 tablespoon
  1. Season the sasami with salt, lemon and garlic. Book in the fridge for at least 4 hours to pick up seasoning.
  2. Coarsely chop the tomatoes, onion, garlic cloves, carrots and beetroot.
  3. Place everything in a baking dish, add the rosemary sprig, salt and drizzle with a tablespoon of olive oil.
  4. Take to preheated oven 220ÂșC to bake for about 40 minutes.
  5. Remove the rosemary branch and blend the sauce in a blender until smooth, add a little hot water if it is too thick, adjust the salt. Reserve.
  6. Grill the sassamis in a non-stick frying pan heated with olive oil until golden and cooked through.
  7. Serve the chicken pieces with the functional sauce on top.
