Chicken fillet4 unit(s)
Escarole1/2 unit(s)
Cottage cheese2 tablespoon
Olive oil1 tablespoon
Salt to taste
Chimichurri to taste
Sweet paprika to taste
Garlic1 unit(s)

Heat a drizzle of oil in a pan and add 1 crushed garlic clove. Leave it until it starts to brown.
Add the chopped escarole and let it cook until wilted. Let cool.
Transfer to a bowl (draining off excess liquid) and mix with the cottage cheese. Reserve.
Beat the chicken fillets to make them thinner. Season with salt, paprika and chimichurri.
Stuff the fillets with the escarole and cottage mixture and roll up (as in the video). Secure with toothpicks.
Place on a greased baking sheet and drizzle with a drizzle of olive oil.
Bake in the oven or airfryer until golden!
