Ingredients

  • Eggplant cut into small cubes | 6 cup
  • Thinly sliced red and yellow peppers | 1 cup
  • Onion, chopped in half moon | 1 cup
  • Sea salt |  to taste
  • Olive oil | 1/2 cup
  • Apple Cider Vinegar | 1 tablespoon
  • Ground black pepper |  to taste
  • Minced garlic | 1 tablespoon
  • Coarsely chopped walnuts | 1/2 cup

Recipe

  1. In a roast, mix all the ingredients well and take it to the preheated oven 200ºC to bake for 30 minutes, stirring a few times to bake evenly.
