- Chop the eggplant and peppers lengthwise
- Chop onion and olive
- In a glass refractory, place all the ingredients and mix well.
- Put it in the oven on high. After 10 minutes in the oven I took it out and mixed it more.
- After another 10 minutes, turn off the oven and leave it there. When the oven cools, remove, mix more and refrigerate.
- Add your accompaniments (I ate with boiled egg and lettuce) and that's it! 😁
