- Almond flour or oat bran150 g
- Grated Parmesan Cheese150 g
- Paprika1 to taste
- Salt1 to taste
- Cut the eggplant into slices and soak in salted water for 5 minutes.
- Mix the flour/bran, grated cheese and paprika
- Coat the eggplants in the egg and then in the mixture made earlier.
- Bake in the oven at 200° for approximately 40min, turning the side after half the time.
