- Medium diced eggplant1 unit(s)
- Chopped Red Bell Pepper1 tablespoon
- Chopped Onion1 tablespoon
- Chopped Garlic1 teaspoon
- Sea Salt to taste
- Olive oil1 dessert spoon
- Heat the oil in a pan and brown the onion and garlic.
- Add the eggplant, salt and sauté over low heat. Add a little water if it's sticking to the bottom of the pan.
- When the eggplant is almost cooked add the bell pepper, mix and cook for another 3 minutes. Serve immediately.
