  1. In a large pot, bring the sago and water to a boil. Once it boils, boil for another 35 minutes, stirring constantly.
  2. Turn off the heat and let it rest with the pan covered for an hour and a half to two hours.
  3. In a sieve or colander, pass the sago several times in cold, running water so that it is very loose and almost all the gum that remains from the sago comes out.
  4. Back in a large pan over medium heat, place the ”washed” sago and 1 liter of red wine, add the sugar and let it boil for about 5 minutes. Place in the fridge to cool and your sago will be ready.
