- In a large pot, bring the sago and water to a boil. Once it boils, boil for another 35 minutes, stirring constantly.
- Turn off the heat and let it rest with the pan covered for an hour and a half to two hours.
- In a sieve or colander, pass the sago several times in cold, running water so that it is very loose and almost all the gum that remains from the sago comes out.
- Back in a large pan over medium heat, place the ”washed” sago and 1 liter of red wine, add the sugar and let it boil for about 5 minutes. Place in the fridge to cool and your sago will be ready.
