- Savioardi Biscuit (champagne biscuit)430 g
- Mascarpone cheese320 g
- Eggs (Large)3 unit(s)
- powdered sugar200 g
- 100% cocoa powder20 g
- Freshly brewed coffee (sugar free)120 ml
- Cognac50 ml
- Separate the whites from the yolks.
- Beat the yolks with 100g of sugar until they become a cream of yolks and set aside.
- Beat the egg whites until doubled in volume. Then, in the form of rain, add the rest of the sugar without stopping to beat until you get a good meringue.
- Just to incorporate, put the mascarpone with the cream of yolks and beat some more.
- Add the meringue to the cream and incorporate with enveloping movements with a spatula very gently.
- Mix cognac and coffee.
- Moisten the cookies and line the bottom of a 40×30 baking dish. Then put the cream. And repeat this process until the baking sheet is complete.
- Place in the fridge for 2 hours.
- Serve cold and to break the candy, sprinkle cocoa (only when serving).
