  • Savioardi Biscuit (champagne biscuit)430 g
  • Mascarpone cheese320 g
  • Eggs (Large)3 unit(s)
  • powdered sugar200 g
  • 100% cocoa powder20 g
  • Freshly brewed coffee (sugar free)120 ml
  • Cognac50 ml
  1. Separate the whites from the yolks.
  2. Beat the yolks with 100g of sugar until they become a cream of yolks and set aside.
  3. Beat the egg whites until doubled in volume. Then, in the form of rain, add the rest of the sugar without stopping to beat until you get a good meringue.
  4. Just to incorporate, put the mascarpone with the cream of yolks and beat some more.
  5. Add the meringue to the cream and incorporate with enveloping movements with a spatula very gently.
  6. Mix cognac and coffee.
  7. Moisten the cookies and line the bottom of a 40×30 baking dish. Then put the cream. And repeat this process until the baking sheet is complete.
  8. Place in the fridge for 2 hours.
  9. Serve cold and to break the candy, sprinkle cocoa (only when serving).
