  • Champagne cookie150 g
  • Mascarpone cheese250 g
  • Gems2 unit(s)
  • Amarula1 tablespoon
  • Strong coffee75 ml
  • Fresh cream100 ml
  • Sugar6 tablespoon
  • Clara1 unit(s)
  • Chocolate powder to taste
  1. In a water bath, place the yolks, 4 tablespoons of sugar, 1/2 of the amarula, beat until thick, let it cool
  2. Mix the iced coffee (50ml) with the mascarpone and set aside
  3. Beat the cream with the remaining sugar and mix with the egg whites very carefully.
  4. Mix 25ml of coffee with the rest of the amarula and soak the champagne biscuits.
  5. In a bowl or with the help of a ring on the plate, make a layer with the biscuit, another layer with the mascarpone, cream with yolk and cream with the whites.
  6. If you want you can make one more layer like step 5
  7. Take it to the fridge for 4 hours and serve finishing with chocolate powder.
