  1. SYRUP Important: the syrup should always be made on the lowest heat on your stove! Place the sugar in a pan until completely melted. Add the water very carefully. The sugar will harden and at this point you will stir until all the pebbles are dissolved. In this process, he will find out, and it takes about 15 minutes. Put the syrup in the mold and, TIP 1: turn the mold and pass the syrup well all over it. If necessary, use a spoon to pour the syrup in the middle of the mold. This will help when unmolding.
  2. PUDDING Crack the eggs into a small bowl and pull the skin from the yolk. TIP 2: if you don't remove the skin from the yolk, it smells like an egg. Place the first egg in the blender while you peel the second egg and leave it to beat, and so on. When you put the third egg, beat without stopping for 5 minutes. Then add the condensed milk and the milk and beat again for another 5 minutes (TIP 3: respect the beat time - don't remove it before - because that's what will make your pudding smooth and creamy).
  3. Put the dough in the shape and take it to the oven in a water bath (the water from the water bath must be placed hot in the shape). TIP 4: Low heat and patience. It will be in the oven at 180° for 2h30. Open the oven every 1 hour to check the need to top up the water in the water bath.
  4. TIP 5: remove the pudding from the oven and let it rest for exactly 20 minutes in the water bath! Unmold carefully so you don't burn yourself!
