- Let the sugar melt, until it has the consistency of a light golden syrup.
- Gradually add the butter and stir constantly.
- Stir constantly until the cream is very uniform.
- When the cream is uniform, turn off the heat and then add the bicarbonate of soda, stirring very quickly (the bicarbonate is optional. It will have the function of whitening the mixture on the spot, turning it into a caramel color).
