- Sugar1 cup
- Water1 cup
- Granulated Tapioca1 cup
- Coconut milk200 ml
- Condensed milk1 can(s)
- Egg4 unit(s)
- In a pan, bring the sugar to the boil and cook until caramelized.
- Add 1/2 cup of water and turn off the heat.
- Pour this syrup into a shape with a hole in the middle and set aside.
- In a bowl, mix the granulated tapioca with coconut milk and let it hydrate for 20 to 30 minutes, set aside.
- Beat the milk with the condensed milk and the eggs in the blender.
- Open the lid of the blender and add the hydrated tapioca
- Whisk quickly, just to mix
- Pour this mixture into the reserved form with the syrup.
- Cover the mold with aluminum foil and bake in a bain-marie (180°C) for about 60 minutes.
- Unmold and store in the fridge
- And that's it, just serve
