- Soak the tapioca in coconut milk and allow a few minutes for the milk to incorporate.
- In the blender place the egg, condensed milk, milk, and grated coconut and beat well. Add the tapioca and continue beating.
- Make a syrup with the sugar and put it in a shape and caramelize. Spread grated coconut on top of the caramel, then pour the pudding and bake in a bain-marie.
